- Taste and adjust with a pinch more salt or vinegar if the filling needs more lift. The flavor should be sweet, tangy, and a little smoky, with the beef still front and center.
- Pile the hot filling onto toasted buns and top with pickles. Serve immediately while the sauce is still juicy and the buns can handle the mess.
