New Mexico-Style Green Chile Pork Stew with Potatoes

Instructions

  1. Season the pork with salt and black pepper and dust lightly with flour if using. Heat the oil in a Dutch oven over medium-high heat and brown the pork in batches until it develops real color on a couple of sides, then transfer it to a plate.
  2. Reduce the heat to medium and cook the onion until softened, then add the garlic, cumin, and oregano and stir until fragrant. Add the tomatillos and cook a few minutes until they begin to slump and lose their raw sharpness.
  3. Return the pork and any juices to the pot along with the chopped green chiles and stock. Bring to a simmer, partially cover, and cook for 45 minutes so the pork starts to tenderize and the chile broth begins to deepen.
  4. Add the potatoes and continue simmering 35 to 40 minutes more until the pork is very tender and the potatoes are soft enough to rough up the broth. If the stew looks too thin, smash a few potato pieces against the side of the pot.
  5. Finish with the lime juice and cilantro, then taste for salt. Serve hot while the broth is still bright from the chiles and the pork is spoon-tender.
