Chicken Spring Roll Noodle Bowl with Peanut Dressing

Instructions
- Toss the chicken with the chopped ginger, chopped garlic, coconut aminos, lime juice, and sesame oil. Marinate for at least 20 minutes while you prep the bowl ingredients.
- Rinse the shirataki noodles very well, drain, then warm them in a dry skillet over medium heat for 2 to 3 minutes to drive off excess water. Transfer to a cutting board and roughly chop so they are easy to eat in a bowl.
- Whisk the peanut butter, lime juice, minced garlic, grated ginger, coconut aminos, rice vinegar, sesame oil, maple syrup, red pepper flakes, 2 tablespoons water, and a pinch of salt until smooth. Add more water 1 tablespoon at a time until the dressing is pourable.
- Set the same skillet over low to medium-low heat. Add the chicken with its marinade and cook, stirring occasionally, until the pieces are cooked through and lightly glossy, 8 to 10 minutes.
- Combine the noodles, carrots, cabbage, scallions, bell peppers, cucumber, almonds, mint, and edamame in a large bowl.
- Top the bowl with the warm chicken, drizzle with peanut dressing, and toss just before serving so the vegetables stay crisp.
