Creamy Roman Carbonara with Guanciale and Pecorino
This version keeps the soul of classic Roman carbonara intact: crisp guanciale, a yolk-rich cheese emulsion, and plenty of black pepper with no cream anywhere near the pan. A small amount of whole egg alongside the yolks makes the sauce more forgiving for home cooks while preserving the lush, glossy texture.

Instructions
- Bring a large pot of water to a boil and salt it moderately. Cook the pasta until just shy of al dente, then reserve 1 1/2 cups pasta water before draining.
- Meanwhile, place the guanciale in a large skillet over medium heat and cook slowly, stirring often, until the fat renders and the meat turns deep golden and crisp at the edges, 8 to 10 minutes. Spoon off all but about 2 tablespoons fat if the pan looks greasy.
- Whisk the egg yolks, whole egg, Pecorino, Parmesan, and black pepper in a bowl until thick and evenly combined. Whisk in 1/4 cup warm pasta water so the mixture loosens slightly and looks glossy.
- Add the drained pasta to the skillet with the guanciale and toss for 30 seconds to coat in the rendered fat. Pull the pan off the heat, pour in the egg mixture, and toss continuously, adding reserved pasta water a splash at a time, until the sauce turns silky and clings to the noodles without scrambling.
- Taste and adjust with more pepper and a little extra cheese if needed. Plate immediately so the guanciale stays crisp at the edges and every bowl gets salty crunch.
