Cajun Chicken and Andouille Gumbo with Dark Roux and Okra
This gumbo leans fully Cajun: a patiently cooked dark roux, plenty of smoky andouille, browned chicken, and just enough okra to round out the pot without turning it slimy. The long simmer gives the broth that deep, toasty flavor that makes a real bowl taste layered instead of muddy.

Instructions
- Season the chicken with salt and black pepper. Brown the sausage in a Dutch oven over medium heat until it renders some fat and darkens at the edges, then transfer it to a plate. Add a little oil if needed and sear the chicken until it picks up color without needing to cook through, then transfer it to the same plate.
- Lower the heat to medium-low and add enough of the remaining oil to make about 1 cup fat in the pot. Whisk in the flour to make a roux. Cook, stirring constantly and scraping the corners of the pot, until the roux turns the color of dark peanut butter or milk chocolate, 20 to 30 minutes. Watch it closely toward the end so it smells deeply nutty and toasty, never burnt.
- Stir in the onions, bell peppers, and celery right away so the vegetables stop the roux from darkening further. Cook until the trinity softens and turns glossy, then add the garlic, bay leaves, thyme, and cayenne and cook for about 1 minute more.
- Gradually whisk in the warm chicken stock until the pot is smooth and lightly thickened. Return the chicken and sausage with any juices, bring to a gentle simmer, partially cover, and cook for about 1 1/4 hours until the broth tastes toasty and rich and the chicken is very tender.
- Add the okra and simmer 20 to 25 minutes more until it is tender and the gumbo has thickened enough to lightly coat a spoon. Stir in the filé powder off the heat, taste for salt and heat, and serve over rice with scallions and hot sauce.
